Moringa pancakes are a delightful way to start your morning!

For this moringa pancake recipe, I opted to use einkorn flour. However, any kind of wheat-based flour will work for making these pancakes.
Moringa powder is made from the leaves of the moringa tree. This powder has many vitamins and nutrients. This leaf is anti-viral, anti-fungal, and anti-bacterial, and is high in Vitamin B, Vitamin C, and quercetin.¹ You can read more about the benefits of moringa powder here.
Einkorn flour is an ancient grain notable for being easier for people to digest. This grain is fantastic, I understand why people are willing to pay a little extra for this flour.
For my family members that our gluten sensitive, we’ve noticed that using grains such as einkorn don’t seem to have the same digestion problems compared to consuming traditional modern flours. For this reason, we mainly bake with low-gluten ancient grains such as einkorn, spelt, and even rye.
- Measuring equipment
- 2 Medium bowls
- 2 cups wheat flour
- 2 eggs
- 1⅓ cup milk
- 1 tsp vanilla extract
- ⅓ cup sugar
- 3 tbsp moringa leaf powder
- 1 tbsp baking powder
- 1 tsp butter
- Heat pan on medium-low
- In a medium bowl, stir all powdered ingredients together.
- In a separate bowl, beat eggs.
- Add milk and vanilla to eggs and stir.
- Mix the ingredients from the two bowls until no dry flour is left.
- Melt 1/2 of the butter on the pan and spread with spatula. Add more butter as needed.
- Pour 2 tbsp of batter on the pan.
- Flip when the edges are bubbling.
- Remove when edges are bubbling and browning.
- Repeat the previous three steps until there is no batter left.
- Serve warm.
