Moringa kefir muffins are a new favorite of mine! Moringa is a fantastic flavor for baking with, and you’ll be seeing more of these recipes.
Muffins are very simple to make and suitable for beginners. These moringa kefir muffins were very popular among my family, and I think yours will like them too! You can check out my other muffin recipes here.
For this recipe, I used einkorn flour, an ancient wheat variety. Wheat flour of any kind is acceptable to use for this recipe.
Moringa
Moringa is a leaf from a tree that has many vitamins and nutrients. This leaf is anti-fungal, anti-viral, and anti-bacterial, and is high in Vitamin C, Vitamin B, and quercetin.¹ You can read more about the benefits of moringa leaves here.
Kefir
Kefir is a fermented, probiotic yogurt-style drink made from milk. This drink naturally has small amounts of carbonation that causes “fizziness” and “creaminess” in the drink.² You can find more information about kefir here.
The kefir reacts with the baking soda, since kefir is naturally slightly acidic. This is a key factor for baking good muffins.

Moringa Kefir Muffins
Equipment
- Medium bowl
- Muffin tin
- Spoon
- 12 muffin cups
Ingredients
- 2 cups wheat flour
- ½ cup sugar
- 2 tbsp moringa leaf powder
- 1 tsp baking soda
- ½ tsp salt
- 1⅓ cup plain kefir
- 1 tsp vanilla extract
Instructions
- Preheat oven to 375.
- In a medium bowl, mix all powdered ingredients together.
- Mix vanilla extract and plain kefir together, then pour into the bowl.
- Stir until ingredients have consolidated.
- Add baking cups to your muffin tin.
- Pour batter with a spoon into muffin cups about 3/4 of the way up.
- Place in oven for about 20-25 minutes
- Let muffins cool down before serving.
