Mexican Breakfast Pizza [Vegetarian]
Introduction
This vegetarian Mexican breakfast pizza is a quick and delicious way to start your morning! Are you a morning person? Me neither. That’s why I specifically designed this recipe to be as fast and easy as possible.
This Mexican breakfast pizza takes about 20 minutes to make, most of which is baking time!
For this recipe, I used a pre-made thin whole-wheat crust. If you don’t have your own pizza crust recipe, you may use mine instead! You can find my pizza crust recipes here. Just be sure to increase the dough amount by 1.5 to 2x. The flours used can be replaced with any wheat flour.
Mexican Blend Shredded Cheese
This recipe uses Mexican blend shredded cheese. Sometimes these cheeses will come with taco seasoning already, in which case you may skip the step of adding taco seasoning to the top of your pizza.
Using your hands, evenly place the cheese around the pizza. While I suggest a 1/3 cup, you may place as much or little as you like according to your own preferences.
“Pizza Sauce”
In this recipe, instead of traditional Italian pizza sauce, we will be using salsa instead. Scoop out 3 tablespoons of salsa, then spread evenly across the pizza.
For this recipe, I recommend a mild or medium salsa. However, if you’re the kind that likes your pizza really spicy, have at it. I have not tested this pizza with a very spicy salsa, so proceed at your own risk.
Toppings
Next, you want to add your toppings. I use scrambled eggs from the microwave in this recipe. I used the recipe found here. Basically, you cook your eggs, covered, for 30 seconds, then you stir and cook another 30 seconds.
When adding your taco seasoning, be sure to do so by hand. This way, you won’t accidentally pour too much in one spot and potentially alter the taste of the pizza.

Ingredients
- 1 pre-made pizza crust (9-10 inches)
- ⅓ cup Mexican blend shredded cheese
- 2 eggs
- 3 tbsp salsa
- ¼ tsp taco seasoning (optional)
Instructions
- Preheat oven to 420.
- Place pizza crust on pizza pan.
- Spread salsa evenly around the pizza.
- Spread cheese evenly over pizza.
- In the microwave, cook eggs for 30 seconds, covered.
- Stir eggs, then cook in microwave for another 30 seconds, covered.
- Place scrambled eggs on top of pizza evenly.
- (Optional) Lightly sprinkle taco seasoning on top of pizza.
