Einkorn Double Chocolate Waffles

These double chocolate einkorn waffles taste great! Chocolate chip waffles are one of my favorite kinds! The double chocolate einkorn waffle batter for this recipe is very easy – even for beginners. There’s no reason to spend the extra money on pre-made waffle mix. These chocolate einkorn waffles will fill you up fast! You only need one or two to feel like you’re full!

I make my double chocolate einkorn waffles in the shape of Texas using a Texas-shaped waffle maker. It takes about 4-5 tablespoons for me to fill the waffle maker completely. However, depending on the shape, it may take you more or less. Be careful to not overfill the waffle maker. Use a tablespoon to fill up the waffle iron with batter until full.

These waffles are cheap and quick, the best of both worlds! They are best topped with powdered sugar, honey, maple syrup, or jam.

Einkorn

Einkorn is by far my top ancient grain flour to bake with. Waffles made with einkorn flour have a great texture. I have more einkorn waffle recipes here. Einkorn is known for being a type of ancient grain that is better for people with wheat sensitivities to digest. Einkorn flour only contains 14 chromosomes, which is much less than the modern wheat of today. The gluten-sensitive members of my household tend to fare better consuming ancient grains such as einkorn, spelt, and rye. However, you should be careful and talk to a medical professional first if this is something you’re looking into.

If you frequently use einkorn flour, I recommend buying einkorn berries in 50lb bags. It is about 1/5 the cost of buying 2lb bags.

Ingredients

  • 2 cups einkorn flour
  • cup milk
  • 3 eggs
  • ¼ cup cocoa powder
  • 2 tbsp chocolate chips
  • tsp baking powder
  • 1 tsp vanilla extract
  • cooking spray (optional)

Instructions

  • Preheat waffle maker.
  • Stir together all dry ingredients
  • Beat eggs in another bowl.
  • Mix all liquid ingredients into the beaten eggs.
  • Mix all ingredients in a bowl until no dry flour is left.
  • When using a waffle iron that is not nonstick, spray cooking oil on the waffle iron.
  • Pour your batter on the waffle iron.
  • Cook waffles until crisp.
  • Remove from waffle maker, either with a spoon or a dull knife.
  • Serve right away, preferably with powdered sugar or maple syrup.
