Einkorn Pumpkin Pie Waffles

  • 2 cups einkorn flour
  • cup milk
  • cup melted butter
  • ¼ cup pumpkin pie spice
  • tsp vanilla extract
  • tsp baking powder
  • cooking spray (optional)
  • 3 tbsp canned pumpkin (optional)


  • Preheat waffle maker.
  • Stir together all dry ingredients
  • Beat eggs separately.
  • Stir all liquid ingredients into the eggs.
  • Mix ingredients in one bowl until no dry flour is left.
  • If using a waffle iron that is not nonstick, spray cooking oil on the waffle iron.
  • Pour batter on the waffle iron.
  • Cook waffles until crisp.
  • Remove using a spoon of dull knife.
  • Serve immediately, goes best with powdered sugar or syrup
