Freeze Chaumes for 30 minutes prior to using.
Place pizza crust on pizza pan.
Spread sauce evenly around the pizza.
Sprinkle chopped onion spice evenly over the sauce.
Cut rind off of the Chaumes.
Cut cheese into pieces less than 1/4 inches thick.
Cover the pizza as evenly as possible with your cheese.
Bake in oven for 10 minutes.
Slice up and serve.
